Goats cheese gnocchi

Ingredients:

Boil the kettle for the gnocchi water.
Cut up the courgette, red pepper, mushrooms and red onion into your desired size. I usually make them chunks ad slice the onion and mushrooms into strips.
Fry the veg with a small drizzle of oil until softening.
Whilst the veg is cooking, turn on the grill. Keep turning your veg, but be careful not to mush it.
Put the hot water into a pan and once boiling add your gnocchi for a few minutes. Meanwhile put your goats cheese under the grill.
Once your gnocchi has cooked, drain it and return to the saucepan.
Spoon a tablespoon of pesto (or more if you prefer) into the gnocchi and stir well.
Add your fried veg and stir.
Spoon the saucepan ingredients into a bowl, top with your grilled goats cheese and sprinkle with peanuts.

Ingredients

Preheat the oven to 200 degrees and Roast your red pepper for 30-40 minutes
Slice 2 thick pieces of your choice of bread (I tend to use granary)
Slice one side with a thick layer of hummus and the other with a thin layer of chilli jam
Slice tomatoes and place on top of hummus, once roasted, put a layer of red pepper on top, followed by a covering of spinach/mixed leaf
Put other slice on top, push down and cut in half
