The ultimate hummus sandwich

Ingredients

• Hummus (I use Sabra)
• Chilli Jam (I use Stokes)
• Spinach or mixed leaf
• Tomatoes
• Roasted red pepper (cut in quarters)
• Fresh bakery loaf

1. Preheat the oven to 200 degrees and Roast your red pepper for 30-40 minutes
2. Slice 2 thick pieces of your choice of bread (I tend to use granary)
3. Slice one side with a thick layer of hummus and the other with a thin layer of chilli jam
4. Slice tomatoes and place on top of hummus, once roasted, put a layer of red pepper on top, followed by a covering of spinach/mixed leaf
   
5. Put other slice on top, push down and cut in half 
   
6. Enjoy!
